Harvest: manual harvest at dawn with careful grape selection
The grapes arrive at the cellar intact at a temperature of approximately 10 °C. They are then destemmed and immediately pressed, with the must transferred in stainless steel tanks. Alcoholic fermentation, initiated by selected yeasts, occurs at controlled temperature of 18°C for approximately 10 days.
Tirage is made after a short steel ageing period and disgorgement after a period of minimum 24 months on the lees.
Wine is released on the market after approx. 6 months of bottle ageing.
