PRODUCTION

Grape variety: 100% Primitivo

Harvest: manual harvest at dawn with careful grape selection

VINIFICATION

The grapes arrive at the cellar intact at a temperature of approximately 10 °C. They are then destemmed and immediately pressed, with the must transferred in stainless steel tanks. Alcoholic fermentation, initiated by selected yeasts, occurs at controlled temperature of 18°C for approximately 10 days.

SPARKLING WINE MAKING METHOD

Tirage is made after a short steel ageing period and disgorgement after a period of minimum 24 months on the lees.
Wine is released on the market after approx. 6 months of bottle ageing.

TASTING

Colour: pale pink, clear and brilliant with fine effervescence.
Bouquet: fresh notes of wild strawberries, cherries, orange peel and incense flower and rose.
Taste: vibrant acidity and fruity notes of wild berries, raspberry, cherry.
Elegant bubbles.
Pairing: aperitif, fried fish and vegetables. Raw fish, light vegetable or fish based first courses, fresh cheeses. Serving temperature: 6°- 8° C
